Fresh, smoked fish from Chez Fumette

The first artisanal smokehouse on the Bassin was born, 3 years ago now, to the delight of our taste buds. Bénédicte Baggio and Julien Marcottework with local fishermen from the Bassin to process sea bream, black mullet, sea bass and other species. With them, no smoked salmon, but an organic truite raised in a lake in Ariège. The salt, meanwhile, comes from l'île de Ré! At Fumette, the light, beechwood-based smoking is sometimes flavored with the scent of juniper, laurel and even vine shoots.

Neuvic caviar in Bordeaux

This is on a 20-hectare estate, along the Isle river in Neuvic, Dordogne, that Laurent Derverlanges has set up his sturgeon breeding farm. There, the females are fed a diet "100% organic, based on GMO-free cereals and processed animal proteins and fishmeal from sustainable fishing". Will you choose the powerful notes of Sevruga caviar, the melting texture and nutty note of Baeri caviar or the golden grains of Osciètre caviar? The boutique also offers other products: sturgeon rillettes, caviar butter, bottarga and dried caviar fleurs de sel.

Laffite, the Landes house of foie gras

With Maison Laffite, the foie gras is IGP Sud-Ouest, a quality label that notably guarantees free-range farming and the geographical origin of the ducks. In fact, the century-old house in the Landes continues to perpetuate old-fashioned, small-scale breeding, with 80 breeder-growers near Montaut. To surprise your guests, you can also indulge in a mango chutney with Espelette chilli to be found in the Bordeaux boutique.

Cheese for end-of-year meals

At Pierre's, Bleu de Bordeaux is special: this Bleu d'Auvergne fermier is macerated in grape must. The raw-milk cheese, covered in the must, thus becomes impregnated with the fragrances of the fermented grapes, and takes on a slightly purplish hue on the surface. Then, after three months' maturing, it's ready! For a local twist, the cheese board can also feature a few canelés or other products from the many cheese shops in Bordeaux.

Henriette and Olga's Yule Logs

In the Saint-Pierre district, Christophe and Dimitri invite you into their workshop-boutique: Henriette & Olga. The name is not a random choice, but a tribute to their grandmothers and their wonderful Yule logs. Here, ingredients are local and fresh, with a carefully selected supplier. As a result, the recipes are balanced with more fruit and less sugar. In short, at the two friends', you'll find ice creams and gourmet treats made with respect for know-how and tradition.

Grand cru chocolates with Hasnaâ

Delicious Morello cherries macerated in kirsch, coated in a soft dark chocolate, all laid on a base of cocoa nibs, to add crunch. This is the recipe for Guinettes, the emblematic chocolate confections from Bordeaux created by Hasnaâ. She and her team work with chocolate "Bean to Bar", i.e. from cocoa selection to roasting, processing and confectionery. As you'll have gathered, she's one of Bordeaux's talented chocolate makers.
