Caviar de Neuvic
Discovering Caviar de Neuvic means stepping into the world of a committed French producer who has chosen to master every stage of caviar production, from hatching to tasting. Founded in 2011, the company is based in the heart of Dordogne, on a 30-hectare estate dedicated to sturgeon farming.
On this historic site, nearly 150,000 female sturgeons thrive in ponds designed to respect their natural rhythm and well-being. Caviar de Neuvic has developed its own hatchery here, ensuring full traceability and consistently high quality. The company also operates a farm in Tarn-et-Garonne, where sturgeons are raised in low-density ponds.
A pioneer in its approach, Caviar de Neuvic became the first mission-driven company in Dordogne and remains today the only producer in France to offer certified organic caviar. All processing takes place at the Neuvic site, which also includes a workshop, a smoking facility, a boutique and a restaurant open to visitors year-round.
In Bordeaux, the Caviar de Neuvic Counter extends this story. Located at 14 Passage Sarget, the boutique is open from Thursday to Saturday, 10 a.m. to 7 p.m. Designed as a place for discovery and sharing, it offers a selection of caviars, sturgeon-based delicatessen products, seafood specialties, as well as a curated range of wines and spirits.
Guided caviar tastings are also available. Lasting one hour, these experiences invite guests to discover the craftsmanship of a caviar producer, learn about sturgeon farming and caviar production, and conclude with a tasting of the house’s products. Four tasting options are
available, starting at €21 per person.
