A young and inventive chef, Cédric Bobinet, is making quite a reputation for himself. His cooking integrates both the finest local tradition and his own creative instincts. He cooks local produces according to the seasons to offer a subtle and refined cuisine (Turbot from Noirmoutier, Artichokes « Poivrades » Sauce, Olives from Lucques, Roasted Pigeon Smoked with Hay, Sauternes, Orange Textures)
Sustainable approachLe Chapon Fin is part of a programme to reduce its carbon footprint. The restaurant works with Détritivores, a cooperative that helps restaurant owners manage their food scraps.
